Carrot Cake Cupcakes w/ Cream Cheese Frosting


Carrot Cake Cupcakes w/ Cream Cheese Frosting

4 eggs
1 1/4 cups vegetable oil
2 cups sugar
2 teaspoons vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots

1. Preheat oven 350 degrees. Line cupcake pan with liners.
2. In a large bowl, beat together eggs, oil, sugar and vanilla. Mix in flour, baking soda, baking powder, salt & cinnamon. Stir in carrots.
3. Fill cupcake liners half way and bake 18-20 mins. Cool completely before frosting.

Cream Cheese Frosting
1/2 cup unsalted butter, softened
8 ounces cream cheese, softened
1 1/2 cups confectioner's sugar
1 teaspoon vanilla extract

Cream butter & cream cheese, add vanilla extract. Slowly beat in confectioner's sugar until smooth.
