So sweet and chewy, these homemade coconut macaroons are so delicious and so simple to make. They're the perfect Easter treat!
Coconut Macaroons Drizzled w/ Dark Chocolate
4 egg whites
1/2 cup sugar
1 teaspoon vanilla
14 ounces sweetened shredded coconut
Dark chocolate (I used Ghiradelli's Dark Melting Wafers)
1. Preheat oven to 325 degrees. Line 2 baking sheets w/ parchment paper.
2. In a stand mixer, beat egg whites and sugar on medium-high until foamy- about 2 minutes. Fold in coconut.
3. Using a cookie scoop, drop batter onto baking sheets- 2 inches a part.
4. Bake for 20 minutes, until lightly golden brown. Cool completely before drizzling with melted dark chocolate.
