Homemade Stout Marshmallows

Who knew that beer and marshmallows would make such a delicious pair! Especially when you use a nice dark stout to make them! I found the perfect beer to make this batch, High Water Brewing's "Campfire Stout"-  it literally tastes like s'mores with graham cracker, chocolate and marshmallow notes. They're the perfect treat for beer lovers, Father's day or for your next campfire!

Homemade Stout Marshmallows
3 envelopes unflavored gelatin
3/4 cup cold, flat dark stout, divided ( I used High Water Brewing "Campfire Stout")
2 cups sugar
2/3 cups corn syrup
1/4 teaspoon salt
1 teaspoon vanilla
confectioner's sugar

Directions:
1. Spray an 8x8 pan w/ non-stick spray and cover with plastic wrap.
2. Using the mixing bowl of your stand mixer (fitted w/ whisk attachment), place 1/2 cup of beer and sprinkle the 3 envelopes of gelatin powder. Stir & let stand for 10 minutes.
3. In a medium saucepan over medium high heat mix the sugar, corn syrup, and 1/4 cup of flat beer until the sugar is dissolved. Bring to a boil and allow to boil rapidly for one minute. Remove from heat.
4.With your mixer on high, carefully start adding the hot syrup in a low stream and mix for about 10-12 minutes. Add salt and vanilla.
5. Lightly spray your spatula with nonstick spray and pour the marshmallow mixture into pan.
6. Smooth the top and allow the marshmallow to set for at least 2 hours. Once marshmallows are set, cut into squares and toss in confectioner's sugar.
7. Eat the marshmallows & make s'mores!

Don't have a campfire? Use your oven! Place graham crackers on a baking sheet in a single layer. Top with stout marshmallows and place in oven set to HI broil. This happens really fast so make sure you watch them! Remove from oven when marshmallows are perfectly toasted. Top with chocolate squares and another graham cracker. 

Devour all of  the gooey goodness!!

DIY Popsicle Donuts & Popsicle-Shaped Donut "Holes"

It's National Donut Day!!
Celebrate by making these festive popsicle donuts and popsicle shaped donut "holes"! 

Stuff You'll Need:
- plain long john donuts (aka bars)
-candy melts (red, white, blue)
-popsicle sticks

Let's Play!
1. Cut long johns in half.
2. Insert popsicle stick at the bottom of the donut.
3. Melt candy melts in microwave (about 30-60 seconds).
4. Decorate donuts!

Stuff You'll Need:
- popsicle mold/pan (Michaels)
- baked donuts recipe- try this one!
- chocolate glaze (1 cup confectioner's sugar, 2 Tbsp. unsweetened cocoa powder, 2 Tbsp. milk)
- colorful sprinkles
